Swordfish: Roast Swordfish w/ Pancetta Garlic Sauce

5 tablespoons pancetta or prosciutto
3 cloves garlic, peel and chop
1/2 cup chopped fresh parsley
2 tablespoons lemon juice
1 teaspoon olive oil
1 pound swordfish steak, 1/2 to 3/4" thick
2 tablespoons capers, drained
2 tablespoons heavy cream
lemon wedges
Recipe
Preheat oven to 350ºF. In small skillet, cook pancetta over medium heat, stirring occasionally, til it begins to turn crisp, about 5 minutes. If using prosciutto, cook only 2 minutes. Add garlic and cook, stirring, for 1 minutes. Remove skillet from heat and add parsley, lemon juice, and generous grinding of pepper.
Grease a medium size roasting pan with half of oil. Place fish in pan. Rub remaining oil all over fish. Spoon pancetta mixture on top. Roast fish until just about opaque in center, about 15 minutes. Remove roasting pan from oven and pour cream and capers around (not on top of) the fish. Preheat broiler and broil fish until golden brown and bubbling, about 5 minutes. Serve fish with pan juices and lemon wedges. Serves 2.
