    1 1/2 pounds salmon fillets
    3 tablespoons balsamic vinegar
    1/2 teaspoon coarsely ground black pepper
    3 tablespoons finely chopped mint or cilantro

    Recipe



    Heat oven to 450ºF. Season fish with vinegar and pepper. Roast 5 to 7 minutes or 10 minutes per inch of thickness. Fish is done when it is opaque and flakes when tested with a fork. Remove from oven and immediately sprinkle minced herb over the top. Yield: 4 servings.
