Salmon: Roasted Salmon with Avocado

1 tablespoon olive oil
1/4 cup + 2 tbl. coarse chop fresh dill or basil
1 1/2 pounds salmon fillet, skin on
1 clove garlic, peel and chop
1/2 ripe avocado, peeled, cut in 4 slices
1/2 cup dry white wine
1 lemon, cut into 4 wedges
Recipe
Preheat oven to 400ºF. Grease bottom of medium size roasting pan with 1/2 tbl. oil. Sprinkle 1/4 c. basil or dill over bottom of the pan and set the salmon on top. Rub the garlic into salmon's flesh and scatter remaining 2 tbls. of basil on top. Place avocado slices on top of salmon, season with salt and pepper, and drizzle the remaining 1/2 tbl. oil over top. Roast the salmon for 10 minutes. Remove the pan from oven and pour white wine around salmon. Continue roasting until salmon is opaque in center, another 3-8 minutes, depending on thickness of fish. Serve with lemon wedges. Serves 4.
