Scallops: Roasted Sea Scallops & Garlic Topping

1 tablespoon olive oil
1 pound medium size fresh sea scallops
2 tablespoons lemon juice
2 cloves garlic, peel and chop
1 pinch sweet Hungarian paprika
1 teaspoon chopped fresh thyme; or 1/4 tsp dry
3 tablespoons dry breadcrumbs
1 lemon, cut into 4 wedges
Recipe
Preheat oven to 400ºF. Grease small roasting pan with the oil. Add the scallops to the pan and pour lemon juice on top. Toss to coat thoroughly. Sprinkle garlic, pepper, paprika and thyme on scallops and top with breadcrumbs. Roast scallops until opaque in center, 12-15 minutes, depending on the size. Scallops should still be soft when pressed with your finger. You want to avoid a hard, rubbery texture. Remove roasting pan from oven. Preheat broiler and broil scallops until golden brown, about 2 minutes. Serve scallops with lemon wedges. Makes 4 servings.
