    Salmon: Salmon Loaf

    Amish Country Cookbook Vol II

    List of Ingredients

    2 tablespoons lemon juice
    1 can salmon, drain and flake (save juice)
    1 cup white sauce
    1/2 cup milk
    1/2 teaspoon salt
    2 beaten eggs
    3/4 cup dry bread crumbs

    Recipe

    Add lemon juice to salmon; add white sauce, mil, salt, eggs and bread crumbs, mixing well. Bake in greased baking dish at 350ºF till brown (approx 30 minutes). For white sauce: Melt 2 tbl. butter in double boiler over low heat. Add 2 tbl flour and blend together. Take salmon juice and milk to make one cup; add to butter and flour mixture. Cook till thick and smooth, stirring constantly. Add 1/4 tsp salt and a dash of white pepper.
