Shrimp: Salt Encrusted Roasted Shrimp

1 pound medium or large shrimp in their shells
4 cups kosher salt
1 lemon cut into wedges
aioli or green sauce (optional)

Preheat oven to 530ºF. Rinse and thoroughly dry the shrimp. Place shrimp in medium size roasting pan or shallow casserole. Pour salt on top; salt should totally cover the shrimp. Roast shrimp for 15 minutes. Remove pan from oven and dig shrimp out from under the salt. Using pastry brush or paper towel, brush off any remaining salt clinging to the shells. Serve shrimp in their shells and let everyone peel their own. Pass the lemon or lime wedges separately. You can use larger shrimp as well and increase cooking time by a few minutes. Serves 4.
