Scallops: Scallops in Dill Sauce

1/2 cup unsalted butter
1/4 cup chopped onion
2 tablespoons cornstarch
1/2 cup water
1/4 cup fresh dill weed, chopped
1/2 teaspoon salt
2 tablespoons white wine or apple juice
2 tablespoons lemon juice
1/4 teaspoon hot pepper sauce
1 1/2 pounds fresh scallops, rinse and drain
hot cooked rice
Recipe
In large heavy skillet, melt butter. Add onion and cook over medium heat until softened. Add cornstarch; stir to blend. Add water, dill, salt, wine, lemon juice and hot pepper sauce. Stir to blend well. Add scallops. Cook over medium heat, stirring occasionally, until sauce is thickened and scallops are tender, 8 to 10 minutes. Serve over rice. Serves 4.
