2 flounder fillets (5 oz each)
1 medium tomato, sliced
1 scallion -- thinly sliced
2 tablespoons dried bread crumbs
2 teaspoons grated parmesan cheese
2 teaspoons margarine
1 teaspoon grated lemon rind
1 teaspoon fresh lemon juiceRecipe
Preheat oven to 350ºF. Place fish in non-stick baking pan; divide remaining ingredients equally on top of each fillet. Bake until fish flakes easily when tested with a fork, about 15 minutes. Makes 2 servings.
