Shrimp: Shrimp Sauteed in Olive Oil

24 large shrimp, peel and devein
2 tablespoons chopped shallots
1 tablespoon minced parsley
6 cloves garlic
1 cup white wine or chicken broth
3 tablespoons olive oil
Recipe
Wash and dry shrimp thoroughly. Season with salt and pepper. In a medium skillet on medium high, add olive oil, then saute shrimp lightly. Remove shrimp from pan, keeping in warm area. Using same pan, saute shallots, parsley and garlic for 3-4 minutes. Add stock or wine, then return shrimp to pan. Bring to boil and cook for 3 minutes over medium heat. Serves 4.
