    Shrimp: Shrimp Scampi

    List of Ingredients

    1/2 pound shrimp - peeled, deveined, halved lengthwise
    2 cloves garlic, to taste, minced -- (2 to 6)
    1 large shallot, minced
    1 1/2 teaspoons olive oil
    3/4 cup chicken stock
    1/2 lemon
    oregano, basil and pepper to taste
    1/4 cup white wine

    Recipe

    Heat a non-stick saute pan on high. Dry cook the shrimp for about 30 seconds on each side. It should NOT be cooked through. Remove and set aside. Lower the heat to medium high, add oil and or margarine and saute garlic, shallot, herbs and spices until translucent. Add shrimp, add wine and let boil to burn off alcohol. Add stock and cook 2 minutes. Take off heat. squeeze 1/4 lemon in and serve. Serving Suggestion: I like this over green (spinach) and white linguine or rice pilaf with salad and some fresh rolls. You can even add peas to the pan and have a whole meal in about 15 minutes. Garnish with lemon wedges and sprigs of basil.
