Catfish: Southern Fried Catfish

1/2 cup yellow cornmeal
Salt & ground red pepper to taste
Black pepper to taste
1 pound frozen catfish fillets -- partially thawed and cut into 2 x 3 inch pieces
Vegetable oil
1/2 cup mayonnaise
3 tablespoons sweet relish
Recipe
In pie plate, mix together cornmeal, salt, red and black pepper. Dredge fish pieces in cornmeal mixture, patting to coat on all sides. In large heavy skillet heat vegetable oil to 375ºF. Fry fillets until golden brown. Drain on paper towels. In a small bowl, mix mayonnaise and sweet relish. Serve catfish warm with mayonnaise and relish mix.
