Prawns: Stir Fried Garlic Chili Prawns

12 prawns, head and shell on
5 cloves garlic, minced
2 tablespoons coarse ground black pepper
1 red chilies, shredded -- (1 to 2)
5 tablespoons oil
1 1/2 tablespoons salt
1 teaspoon Chinese rice wine
2 teaspoons minced fresh ginger
1 medium yellow onion, sliced, sauteed -- until translucent
2 shredded green onions
Recipe
Marinate prawns in garlic, pepper, 1/2 the shredded chillies, 2 tbsp. of the oil, corn flour, salt, wine and ginger for at least 2 hours. Heat wok over high heat and add the remaining oil when wok is smoking. Stir fry prawns in oil over very high heat until cooked. Add yellow onion and fry for a further 1/2 min. Dish up and serve immediately, garnishing with spring onions and remaining chillies.
