Salmon: Summer Salmon Roast

List of Ingredients
1/2 tablespoon olive oil
1/2 cup chopped fresh chives, parsley or other fresh herbs
1 pound salmon fillet, skin on
2 tablespoons chopped fresh basil
juice of 1 lemon
2 medium ripe tomatoes, cut into cubes
1 1/2 tablespoons butter
1 tablespoon chopped fresh dill
1/2 cup chopped walnuts, almonds or pine nuts
Recipe
Preheat oven to 400ºF. Grease bottom of roasting pan or ovenproof skillet with the oil. Place the chives in the pan and top with the fish. Sprinkle with the basil and lemon juice. Surround the fish with tomatoes and dill. In small skillet, heat 1 tbl. of butter over medium heat. Add the nuts and coo, stirring til golden brown, 3-4 minutes. Season with salt and pepper. Sprinkle nuts over the fish. Top the nuts with remaining 1/2 tbl. butter, cut into small cubes. Roast the fish until opaque in center, 10-12 minutes, depending on thickness of fish. Serves 2.
