3 tablespoons stone ground mustard or dijon
2 tablespoons white wine
1 tablespoon rosemary
salt, pepper, onion powder to taste
2 cloves garlic, press or mince
2 rack lamb, 1.5 lb, trim of fat
1 cup seasoned bread crumbs
Recipe
Mix marinade ingredients and spread over lamb, set aside for about 30 minutes. Preheat oven to 425ºF. Incrust each rack with bread crumbs and place in roasting pan interlocking the rib bones so they stand up. Roast on 425ºF for 15 minutes. Lower heat to 375ºF and roast another 30 to 45 minutes until medium. Allow to sit for 10 minutes and then cut into individual chops. Serving Suggestions: I served this with roasted garlic couscous, broccoli, semolina bread and a nice green salad. It would go well with rice pilaf and cucumber salad as well. Serves 4-6
