3 tablespoons stone ground mustard or dijon
2 tablespoons white wine
1 tablespoon rosemary
salt, pepper, onion powder to taste
2 cloves garlic, press or mince
2 rack lamb, 1.5 lb, trim of fat
1 cup seasoned bread crumbs
Recipe
Mix marinade ingredients and spread over lamb, set aside for about 30 minutes. Preheat oven to 425�F. Incrust each rack with bread crumbs and place in roasting pan interlocking the rib bones so they stand up. Roast on 425�F for 15 minutes. Lower heat to 375�F and roast another 30 to 45 minutes until medium. Allow to sit for 10 minutes and then cut into individual chops. Serving Suggestions: I served this with roasted garlic couscous, broccoli, semolina bread and a nice green salad. It would go well with rice pilaf and cucumber salad as well. Serves 4-6
