Broccoli Stuffed Meatloaf

1 1/4 pounds lean ground beef
1 egg
1/4 cup bread crumbs
4 green onions minced
1 teaspoon salt
1/2 teaspoon basil
1/8 teaspoon pepper
1 1/2 cups broccoli florets
1/2 cup shredded Cheddar cheese
1 tablespoon butter or margarine melted
1 tablespoon ketchup
Recipe
Preheat oven to 350°F. Spray an 8x4-inch loaf pan with non-stick vegetable spray.
In a large mixing bowl combine ground beef, egg, half the bread crumbs, three fourths of the onion, three fourths of the salt, basil, and pepper; mix thoroughly. Set aside.
Drop broccoli into a saucepan of boiling water; cook until crisp tender. Drain thoroughly.
In a medium bowl, combine broccoli, cheese, remaining bread crumbs, green onions, and salt. Press half the meat mixture in prepared loaf pan, forming an indentation in the center. Place broccoli mixture on top of meat mixture. Place remaining meat mixture on top, sealing around the edges.
Combine ketchup and butter. Brush over the top of loaf. Bake for 1 hour or until loaf pulls away from the sides. Cut into slices.
