    HamLoaf: Upside-Down Ham Loaf

    2 tbsp. butter
    1/4c. brown sugar
    8 to 12 canned pineapple wedges
    Whole cloves
    4 c. cooked ham
    1 tbsp. grated onion (opt.)
    1/2 tsp. dry mustard
    1 c. bread crumbs
    1/2 c. pineapple juice
    2 eggs, slightly beaten
    Dash of pepper

    Recipe

    Melt butter in bottom of greased loaf pan; sprinkle with brown sugar. Stud pineapple wedges with whole cloves; arrange on top brown sugar. Combine ham with all remaining ingredients; pack into pan over pineapple wedges. Bake at 375 degrees for about 30 minutes. Turn out upside-down onto a hot platter. Yield: 6 to 8 servings.
