    1 sm onion chopped
    3 x garlic cloves minced (3 to 4)
    2 x frozen chopped spinach (10 oz packages) thawed and well drained
    1/4 tsp nutmeg
    1 1/2 cup nonfat ricotta cheese
    1 cup nonfat mozzarella cheese
    1 x egg
    1/4 tsp dried oregano
    1/4 tsp dried basil
    salt and fresh ground pepper to taste
    3 cup fat-free prepared marina or spaghetti sauce
    12 piece oven-ready dry lasagna noodles
    1/4 cup grated parmesan cheese or Romano cheese

    Preheat oven to 375 degrees. In a large skillet, over medium heat, cook onion and garlic until onion turns translucent; 3-4 minutes.Add spinach and nutmeg and cook, stirring until liquid is absorbed, about 3 mins.Remove and spread into a shallow dish to cool/ about 15 mins.

    Meanwhile in a medium bowl, combine ricotta, mozzarella, egg, oregano, basil, and pepper.Set aside 1/2 cup of marina sauce.In a 7 1/2x12x1x3/4-inch baking dish, pour a thin coating of sauce. Cover with 3 uncooked lasagna noodles. Top with 1/3 of spinach, followed by 1/3 of the cheese mixture. Repeat 3 times.Pour on reserved marina sauce and sprinkle with cheese. Cover dish with foil and bake 30 mins. Remove foil and continue baking until noodles are cooked through, about 12-15 mins. Let cool, and cut into sections.
