Spinach Lasagna with Sweet Tomato Sauce

List of Ingredients
9 lasagna noodles, cook and drain
10 ounces frozen chopped spinach, defrost and drain
1 pint nonfat cottage cheese
8 ounces lowfat cream cheese
2 cups grated lowfat mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1/2 teaspoon italian herb seasoning
salt and pepper to taste
SWEET TOMATO SAUCE:
1 can (1 lb 12 oz) crushed tomatoes in tomato -- puree
1 onion, grated
2 tablespoons oil
1 teaspoon sugar
1/2 teaspoon italian herb seasoning
salt, pepper, garlic powder to taste
Recipe
For sauce, combine all ingredients in saucepan and simmer for 5 minutes. In a 9x13 inch greased pan, place 3 cooked noodles evenly in one layer. Beat together remaining lasagna ingredients until blended. Place 1/2 of the spinach filling evenly over the noodles. Continue with 3 more noodles and then the remaining spinach filling. Top with remaining noodles. Pour Sweet Tomato Sauce evenly over the noodles and sprinkle top with additional grated parmesan cheese. Heat in a 350ºF oven for about 45 minutes or until heated through. It might bubble earlier, but the center will not be hot. Cut into squares and serve with salad or cold marinated vegetables. Serves 8-10.
