I haven't tried this one.. the original poster at mimi's archive neglected to say what you do with the spinach mixture once you set it aside.. I am assuming you can mix it in with the ricotta mixture and then proceed as direccted with ricotta mixture. Also am assuming it's ok to use either homemade or jar marinara mix (or any spaghetti sauce you prefer).
List of Ingredients
2 packages frozen spinach, thaw and dry well
8 tablespoons butter
1 cup regular ricotta cheese
7 tablespoons flour
1 cup grated parmesan cheese
2 eggs
1/2 teaspoon pepper
8 ounces lasagna noodles, cooked
Recipe
Cook the two 10 oz pkgs of spinach (that are squeezed as dry as you can get them ) to get the rest of the moisture out of it. Cook on medium heat stirring constantly. Add 2 tablespoons of butter and cook til moisture is gone again. Set aside. Mix 1 cup ricotta cheese (use the regular ricotta, the lighter version is way to watery for this), 2 eggs slightly beaten, flour, 1/2 cup parmesan cheese salt and pepper and nutmeg. Mix thoroughly.
With one cooked lasagna noodle spread ricotta cheese on a noodle and roll up. Put into a well greased baking dish seam side down. Repeat until all the mixture and noodles are gone. Cover with a marinara sauce and sprinkle with parmesan cheese and bake at 375ºF for 30 minutes. Some people like to put mozzarella cheese or provolone on it before baking. Can also bake it like it is and then before serving, sprinkle generously with grated parmesan cheese again.
