    Baked Macaroni & Cheese

    List of Ingredients

    1/2 tablespoon salt
    1/8 teaspoon pepper
    5 cups cooked large elbow macaroni
    1/4 cup flour
    3/4 teaspoon dry mustard
    1/8 teaspoon red pepper
    3 cups skim milk
    1 1/4 cups lowfat shredded cheddar, divided
    1/4 cup shredded Swiss cheese

    Recipe

    Melt margarine in a large, heavy saucepan over low heat; add flour, mustard and red pepper. Cook 1 minute, stirring constantly with a wire whisk. Gradually add milk; stir well. Cook over medium heat 10 minutes or until thickened and bubbly; remove from heat. Add 3/4 cup Cheddar shreds and next 3 ingredients, stir until cheese softens. Stir in macaroni; spoon into 2-quart casserole. Sprinkle with remaining Cheddar shreds. Cover and bake at 350ºF for 30 minutes. Let stand, covered, 10 minutes before serving.
