Cristina's Macaroni & Cheese Casserole

3 tablespoon Butter
3 tablespoon Flour
2 cup Milk warmed
1 1/2 pound Elbow macaroni cooked
1 pound sharp cheddar cheese shredded
1 pound Monterey jack cheese shreddedRecipe
In a small sauce pan, melt butter. Add flour and whisk together to create a roux. Add milk and whisk until smooth and slightly thickened. When thickened, add 3/4's of each cheese and mix to combine. Pour cheese over macaroni. Mix well and place in a large casserole dish and top with remaining cheese. Bake at 350 degrees for 20 minutes.
