    Stuffed Shells: Beefy Tomato Stuffed Shells

    List of Ingredients

    1 pound ground beef
    1/2 cup minced onion
    1/2 teaspoon pepper
    1/4 teaspoon garlic powder
    1/4 teaspoon crushed red pepper
    1 1/4 cups beef broth
    7 ounces sun dried tomatoes in oil, drained
    1/4 cup toasted pine nuts
    1/4 cup basil leaves (fresh)
    2 tablespoons chopped fresh parsley
    2 cloves garlic
    1/4 cup olive oil
    1/3 cup grated Parmesan cheese
    1 32 ounce jar spaghetti sauce
    1 1/2 cups shredded Mozzarella cheese
    2 tablespoons chopped fresh parsley (garnish)
    24 large pasta shells, uncooked

    Recipe

    Cook shells according to directions - drain & set aside. Brown beef & onion - drain. Add pepper, garlic powder, red pepper. Cover & set aside. Add beef broth & next 5 items in blender. Mix, then add olive oil until combined. Stuff shells with beef mixture; pour some of sauce into bottom of 9x13 inch baking pan. Place shells onto sauce and then pour more sauce over top. Sprinkle on shredded cheese. Cover with foil and bake in 350ºF oven for 20-30 minutes. Good with green salad and crusty bread.
