    Carbonara: Bernie's Penne Carbonara

    List of Ingredients

    3/4 stick butter
    1 tablespoon minced garlic
    1/2 pound penne pasta
    3 slices pancetta or bacon
    1 cup mushrooms, sliced
    1 teaspoon blackening spice
    1 1/2 cups heavy whipping cream
    1 cup shrimp, peeled and deveined
    1/2 cup onion, diced
    1/4 cup chopped scallions
    1/4 cup finely chopped parsley

    Recipe

    Cook pasta until al dente. Cook bacon in skillet for 4 minutes on medium/high heat. Throw in onions & cook until translucent. Add mushrooms. They will soak up bacon grease. Add 1 tbs. of blackening mix. Stir vigorously for 4 minutes. Blackening seasoning will stick to pan, that's ok. Let it stick. Deglaze pan with 1 cup of heavy whipping cream. Reduce for 5 to 7 minutes, stirring constantly. When it is the consistency of thick buttermilk, add the shrimp. Then add scallions & some parsley. Then add garlic & butter. Stir until melted. stirring constantly. Serve over penne pasta. Garnish with parmesan or asiago cheese.
