Tomato: Cheese & Tomato Macaroni

List of Ingredients
3 cups macaroni
1 tbsp butter
1 small onion,finely chopped
1/4 cups flour
3 cups milk, heated
1 tsp Dijon mustard
2 cups shredded aged cheddar cheese
1/4 cup freshly grated parmesan cheese
1 can diced tomatoes, drained
1 tsp salt
1/2 tsp pepper
Recipe
1. Cook macaroni according to package directions:drain well.
2. In a saucepan, melt butter over medium heat; cook onion until softened. Add flour and cook, stirring for 1 min.without browning.
3. Gradually whisk in milk until smooth; whisk in mustard. Cook,stirring often for 10-12 min or until thickened, do not boil.
4. Remove from heat;stir in cheddar and parmesan cheese until melted. Drain tomatoes again and stir into sauce along with salt and pepper.
5. Pour over macaroni and toss to coat.
