    Misc: Fettuccine with Avocados

    List of Ingredients


    2 tablespoons olive oil
    1/4 cup sherry wine vinegar
    1/2 cup chopped fresh basil
    2 tablespoons chopped green onions
    1/4 cup diced green bell pepper
    1/2 cup marinated dried tomatoes, drained -- halved
    2 tablespoons chopped walnuts
    1 whole avocado, peeled and diced
    1 pound dried fettuccine noodles

    Recipe

    In a large bowl whisk together the olive oil, vinegar, basil and green onion. Add bell pepper, dried tomatoes, walnuts and half the avocado. Toss ingredients well so they are evenly coated with the oil and vinegar. Cook pasta following package directions. Drain pasta and add to bowl with other ingredients while pasta is still hot. Toss all ingredients. Serve immediately. Use the remaining avocado to garnish the top of the pasta. Makes 6 servings.
