Marinara: Freezer Marinara Sauce

List of Ingredients
1/4 cup olive oil
1 medium yellow onion, finely chopped
2 cloves garlic, minced
2 pounds ripe plum tomatoes, peel and chop
or 28 ounces crushed tomatoes
1 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/4 teaspoon black pepper
Recipe
Heat olive oil in medium saucepan over moderate heat. Add the onion, and saute, stirring occasionally until soft, about 5 minutes. Stir in the garlic, tomatoes, oregano, salt and pepper. Bring to a simmer, then reduce heat to low. Cook, uncovered, for about 25 minutes or until thick. Makes 3 cups, about enough for 1 pound of pasta. Can be frozen in 1 pint freezer bags for up to 3 months.
