    Alfredo: Freshened Fettuccine Alfredo

    List of Ingredients

    1 pound fettuccine
    3 tablespoons flour
    1/3 cup lowfat milk + 3 cups
    1 tablespoon unsalted butter
    1/2 teaspoon freshly ground pepper
    1/4 teaspoon grated nutmeg
    2/3 cup grated parmesan, preferably imported
    1/4 cup chopped flat leaf parsley

    Recipe

    Cook fettuccine in a large pot of boiling salted water until al dente, 8-10 minutes. Drain well. meanwhile, stir the flour into 1/3 cup of milk until dissolved. In a large, preferably nonstick skillet, melt the butter over medium heat and stir in the flour and milk paste.

    Cook, stirring, for 1 minute. Slowly whisk in the remainder of the milk and cook, stirring constantly, until the sauce comes to a boil and thickens. Reduce the heat to medium-low and add the pepper and nutmeg. Simmer, stirring occasionally, for 3 minutes. Toss the pasta with the sauce. Add the Parmesan cheese and toss again. Sprinkle with the parsley and serve immediately. Serves 6.
