Mushroom: Jan's Tomato Mushroom Sauce

12 large italian plum tomatoes, chopped
3 medium portobello mushrooms, chopped
3 cloves garlic, sliced thinly
4 tablespoon olive oil, extra virgin
salt & pepper, to taste
Recipe
Place all of the ingredients in a 2 quart saucepan. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce the heat to medium and cook an additional 10 minutes. No additional water is necessary.
Meanwhile heat a pot of water for the pasta. Cook the pasta al dente, any pasta will do as long as it is of good quality.
About 1-2 minutes before the pasta is cooked, turn the heat on for the sauce. As soon as the pasta is ready, drain it, and then sauce it. Serve Immediately. Either grated or shaved Parmesan or Pecorino Pepate may be served as a condiment.
