    Chicken: Lemon Chicken Pasta Toss

    Adapted from Easy Low-Fat Makeover Recipes

    List of Ingredients

    2 tbsps cornstarch
    1 3/4 c chicken broth
    2 tbsps lemon juice, bottled
    1 tbsp Dijon mustard
    2 cloves garlic -- minced
    9 ozs chicken breast strips -- cooked
    1 tbsp parsley
    8 ozs spaghetti, thin -- cooked

    Recipe

    In a small bowl, combine cornstarch, broth, lemon juice, mustard, and garlic. Mix well and set aside. In a skillet, cook chicken until is no longer pink; set aside. In another skillet, cook cornstarch mixture until thickened. Add chicken strips. Cook until heated through. Sprinkle parsley over top. Toss with cooked spaghetti. Serves 5
