Garlic: Linguine with Braised Garlic

3 tablespoons olive oil
8 large cloves garlic, cut into 1/4" dice
6 quarts salted water
1 pound dried linguine
3 tablespoons unsalted butter
1 1/4 cups parmesan cheese
8 teaspoons balsamic vinegar + 1 tsp brown sugar
Recipe
Garlic: in heavy large skillet, heat 3 Tbl. oil over medium-low heat. Add garlic and lower heat to lowest setting. Cook, covered, for 5 minutes. Uncover and continue cooking for 8 minutes or until garlic barely colors to pale blonde and is very tender. Stir frequently (dont let turn brown). Cook pasta in salted water; spoon 3 Tbl. of cooking water into the cooked garlic before draining pasta. Remove garlic from heat and add the hot drained pasta. Add additional butter and toss; season with salt and pepper, then toss with cheese.
