CREPES:
6 eggs, room temp, beaten
1 1/2 cups flour
1/4 teaspoon salt
1 1/2 cups water
FILLING:
2 pounds ricotta cheese
8 ounces mozzarella cheese
1/2 cup Parmesan cheese
2 eggs, beaten
1 teaspoon salt
1/4 teaspoon pepperRecipe
Crepes: Combine ingredients and mix until smooth. Let stand 1/2 hour before making crepes. Use 3 T. per crepe. Pour batter in crepe pan or small fry pan and swirl until batter covers bottom of pan. Cook until just set; turn and cook on the other side for about 30 seconds. Remove from pan and continue until all batter is used. Filling and Assembly: Combine all filling ingredients and mix until smooth. Roll 2 T., more if you like them thick, in crepe. Layer in a baking pan and cover with tomato sauce. Place slices of mozzarella on top if you'd like also. Bake at 350ºF for 30 minutes.
