Misc: Noodle Pie with Spicy Cajun Ham

8 ounces egg noodles, broken 1" pieces
3 tablespoons butter
2 cloves garlic, minced
4 eggs
1 cup fine diced spicy smoked ham
1/2 cup shredded cheddar cheese
2 tablespoons minced parsley
2 teaspoons paprika
1/2 teaspoon salt
3/4 teaspoon dried oregano and thyme, crumbled
1/4 teaspoon hot red pepper sauce
1/4 teaspoon ground red pepper and black pepper
Recipe
Preheat oven to 350ºF. Cook noodles until al dente, then drain and rinse under cold water. Melt butter in heavy skillet over medium low heat. Add garlic and cook until just golden, about 1 minute, then set aside. In large bowl, beat the eggs. Add garlic and butter mixture, ham, cheese, herbs and seasonings, mixing well. Stir in noodles. Spoon into lightly oiled 10" quiche dish or pie pan. Bake uncovered for 30-35 minutes or until firm and lightly browned. Cool to room temperature and refrigerate, tightly covered, for at least 2 hrs, up to 24. Cut into wedges and serve cold. Serves 6.
