    Manicotti: Pasta Shells Florentine

    List of Ingredients

    1 pound manicotti shells
    1 package 10-oz. frozen chopped spinach, thawed,drained
    1 cup grated mozzarella cheese
    1 cup 2% small-curd cottage cheese
    1/4 teaspoon ground nutmeg
    1 14-oz. jar spaghetti sauce

    Recipe

    Preheat oven to 350°F. Lightly grease 13x9x2-inch non-reactive baking pan; set aside.

    Prepare manicotti according to package directions; drain and set aside.

    Combine spinach, mozzarella cheese, cottage cheese and nutmeg in a bowl. Fill manicotti shells with spinach mixture. Place in prepareded baking dish. Spoon spaghetti sauce on top.
    Cover and bake for 30 to 40 minutes or until cheese is bubbly.

    Original poster's note: I DID put some spag. sauce in the bottom of the baking dish and added fresh sliced mushrooms, garlic and an additional two cheeses: ricotta and shredded parmesan. I will use this recipe again and again. I sauteed a cup of onion, finely chopped, and a large clove of garlic, minced, and added them to the spinach and cheese mixture.
