    Bacon: Pasta with Spinach, Bacon & Garlic

    List of Ingredients

    1 pound small pasta, such as macaroni or penne
    1 pound fresh spinach, cleaned and stemmed
    8 strips bacon, diced
    1 onion, peeled and sliced
    2 cloves garlic, crushed
    1/2 teaspoon red pepper flakes
    1 tablespoon red wine vinegar
    3 tablespoons grated Parmesan cheese

    Recipe

    Prepare pasta according to package directions; drain, set aside and keep warm. Cook spinach in boiling water until just wilted; drain, reserving cooking liquid.

    In a large skillet, cook bacon over medium heat, stirring constantly, until just browned; drain on paper towel. Sauté onion, garlic and red pepper flakes in the residual bacon grease over medium heat; until onion is soft.

    Bring reserved spinach cooking liquid to a boil; prepare pasta according to package directions; drain. Combine pasta, spinach, bacon, onion mixture and red wine vinegar; toss to mix evenly. Sprinkle with Parmesan cheese.
