Artichoke: Penne with Artichoke

6 ounces pasta -- penne
1 tablespoon olive oil
1 tablespoon onion -- finely chopped
3 cloves garlic -- minced
2 cups frozen artichokes -- thawed and quartered
2 teaspoons mint leaves -- minced
2 teaspoons parsley -- minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup dry white wine
2 tablespoons flour
1 cup chicken broth
2 tablespoons parmesan cheese -- grated
Recipe
Preheat oven to 425ºF. Spray 8" square metal baking pan with nonstick spray. In large pot of water, cook penne 10-12 minutes. Drain and keep warm. Meanwhile, place large nonstick skillet over medium heat 30 seconds; heat oil 30 seconds more. Add onion and garlic; cook, stirring frequently, 3 minutes or til onion is translucent. Add artichoke hearts, mint, parsley, salt and pepper.
Cook, stirring constantly, 3 minutes. Add wine; increase heat to high and cook until wine evaporates. Lower heat to medium; sprinkle with flour. Cook, stirring one minute. Gradually stir in broth; cook, stirring constantly 3-4 minutes, until thick and creamy. Remove from heat. Add pasta and 1 Tbl.parmesan; toss to blend well. Transfer to prepared pan. Sprinkle evenly with rest of Parmesan. Bake 10-12 minutes; then place under broiler 1-2 minutes to brown top lightly.
