    Mushroom: Portobello Mushroom Pasta

    List of Ingredients

    16 ounces long pasta, such as spaghetti or fettuccine
    2 1/2 tablespoons olive oil
    2 cloves garlic, peeled and minced
    1/2 pound portobello mushrooms, cleaned and sliced
    1/2 pound button mushrooms, cleaned and sliced
    1/4 teaspoon salt
    1/4 teaspoon ground black pepper
    1/2 cup white wine
    3/4 cup grated Parmesan cheese
    1 tablespoon chopped fresh parsley

    Recipe

    Cook pasta according to package directions; drain.

    Heat olive oil in a nonstick skillet over medium-high heat. When hot, add garlic and sauté until golden, about 2 minutes. Add portobello and button mushrooms and sauté for 5 minutes. Season with salt and pepper.

    Pour in wine and simmer until liquid has reduced by half, about 5 minutes. Add pasta and toss. Serve sprinkled with Parmesan cheese and parsley.
    (tasters suggest doubling both the mushrooms and the wine)
