Stuffed Shells: Ricotta Stuffed Shells

List of Ingredients
1 package giant pasta shells
1/2 package ricotta cheese
1 pound mozzarella cheese -- shredded
1/3 cup parmesan cheese -- grated
2 eggs -- slightly beaten
1/4 cup parsley -- chopped
1/2 teaspoon salt
1/4 cup fine dry breadcrumbs
2 jars spaghetti sauce
Recipe
Add 1 Tbl salt to 4 quarts rapidly boiling water. Gradually add the shells so that the water doesn't stop boiling. Boil uncovered 15 minutes. Stir occasionally. Drain portion of water, allowing the shells to remain in warm water. Mix cheeses, eggs, parsley, salt and bread crumbs. Remove one shell at time from water. Stuff each shell with mixture using spoon. Pour one pint of sauce into large shallow casserole. Arrange stuffed shells in casserole. Add second pint of sauce. Cover and bake at 375ºF for 30 minutes.
