    Misc: Spaghetti w/ White Wine Caper Sauce

    List of Ingredients

    16 ounces spaghetti noodles
    2 tablespoons olive oil
    1 cup chopped onion
    2 cloves garlic, crushed
    1 cup water
    1/2 cup white wine
    1 teaspoon crushed dried oregano
    1 teaspoon salt
    1/2 teaspoon crushed dried thyme
    1/2 teaspoon ground black pepper
    1 bay leaf
    2 pounds tomatoes, cored and chopped
    2 tablespoons chopped sweet pickle
    2 tablespoons finely chopped capers
    2 tablespoons chopped fresh parsley

    Recipe

    Prepare pasta according to package directions. Drain and set aside. Heat olive oil in a large, heavy skillet over medium-high heat; add onions and garlic, sauté until fragrant and tender, about 5 minutes. Add water, white wine, oregano, salt, thyme, pepper and bay leaf; bring to boil. Boil 5 minutes; add tomatoes, sweet pickle and capers; simmer uncovered, until liquid evaporates, 15 to 20 minutes, stirring occasionally. Remove bay leaf, add parsley; serve over prepared noodles.
