    Clam: Spaghetti with Clams in Marinara

    List of Ingredients

    1 package (16-oz.) spaghetti pasta
    2 tablespoons olive oil
    1 small onion, peeled and minced
    1 cup sliced mushrooms
    1 cup diced celery
    1/4 cup grated carrot
    3 tablespoons chopped fresh parsley
    2 cloves garlic, peeled and thinly sliced
    1 can (14.5-oz.) diced tomatoes, drained
    2 cans (6.5-oz.) chopped clams, rinsed and drained
    8 ounces clam juice
    1/2 cup chicken broth
    1/4 cup dry red wine
    2 teaspoons chili sauce
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper

    Recipe

    Cook spaghetti according to package directions; drain.

    Meanwhile heat a large skillet over medium-high heat. Add oil and when hot, but not smoking, add onion, mushrooms, celery, carrot, parsley and garlic and sauté for 5 minutes, or until tender. Stir in tomatoes, clams, clam juice, chicken broth, red wine, chili sauce, salt and pepper. Bring to a boil, reduce heat and simmer for 10 minutes.

    Toss with cooked spaghetti and serve immediately.
