Meat Sauce: Spaghetti with Fresh Tomato Meat Sauce

List of Ingredients
1 pound spaghetti
1 pound ground chicken, turkey or beef
4 large roma tomatoes or 2-3 reg tomatoes
4 cloves garlic, fine minced
1 small onion, fine diced
basil and oregano to taste
1 cup defatted chicken stock
salt and pepper to taste
1 tbl. water -- (1 to 2)
Recipe
Cook Spaghetti to taste. Place ground meat and water in a deep saute pan and heat on high until meat begins to brown. Remove the meat to a strainer and rinse under very hot water to remove any excess fat. Return to pan and finish browning, then remove and set aside. Heat pan and spray with oil. Add garlic and onion and saute until they begin to soften. Be careful not to burn the garlic. Add Seasonings. Add tomatoes and mix well.
Continue to cook until the tomatoes have soften and given off their juice (about 10 minutes). Add the meat back in and stir. Add chicken stock and let simmer until your pasta is ready. Drain pasta and either mix the sauce into it or serve with the sauce on top.
Serving Suggestions: This is a very light sauce that is chunky but not thick. Can process in food processor to make smooth. You can add peas, mushrooms, peppers, etc. to you liking to make it more substantial. I like to serve this dish with a green salad and a nice loaf of Italian bread.
