    Clam: Spaghetti with White Clam Sauce

    List of Ingredients

    1 can whole baby clams or 1 c. fresh clams chopped, liquid reserved
    1/4 c. water -- (1/4 to 1/2)
    3 cloves garlic, pressed or fine minced
    1 shallot, fine minced
    1/4 cup white wine
    1 teaspoon olive oil or olive oil spray
    basil, oregano and pepper to taste
    1 pound spaghetti

    Recipe

    Cook pasta to taste. Heat a deep saute pan on medium high and add oil. Saute garlic and shallot until soft and add seasonings. Add wine and bring to boil. Add clams, reserved liquid and water. Bring back up to the boil. Toss pasta with clam sauce and serve. Serving Suggestions: I like to garnish this dish with fresh basil and lemon wedges. I think you can round out this meal with a green or Caesar salad and some crusty Italian bread.
