Seafood: Spicy Dill Shrimp with Spaghetti

1 package (12-oz.) spaghetti pasta
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
1/4 cup minced onion
2 cloves garlic, peeled and chopped
1/2 teaspoon crushed red pepper flakes
1/4 cup chicken broth
3 tomatoes, peeled, seeded* and puréed
1/3 cup clam juice
1/3 cup dry white wine
1 tablespoon chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons grated Parmesan or Asiago cheese, (optional)
Recipe
Cook spaghetti according to package directions.
Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add shrimp and sauté until just pink. Remove from pan with a slotted spoon and set aside.
Add onion, garlic and red pepper flakes and sauté for 1 minute until fragrant. Add broth to pan and bring to a boil. Simmer until liquid is almost completely evaporated. Stir in tomatoes, clam juice, wine, dill, salt and pepper. Bring to a boil, reduce heat and simmer gently for 10 to 15 minutes to allow flavors to blend. Add shrimp and cook for 2 more minutes or until mixture is thoroughly heated.
Place hot, drained pasta on a serving platter. Pour sauce over spaghetti. Garnish with cheese, if desired, and serve immediately.
*To peel and seed a tomato, lightly score an 'x' into the bottom end with a sharp paring knife. Drop into boiling water for 30 seconds, or until skin just begins to tear. Remove with a slotted spoon into ice water. When cool enough to handle, peel off skin, cut in half and gently squeeze to remove seeds. Proceed with recipe.
