Tomato Sauce: Spicy Tomato Sauce

List of Ingredients
2 tablespoons olive oil
3 tablespoons chopped shallots
3 tablespoons chopped garlic
2 pounds tomatoes -- coarsely chopped
(or a 28-oz can of Italian plum tomatoes,
coarsely chopped)
1 teaspoon harissa sauce
(or 1/2 tspn dried red pepper flakes
mixed with 1/2 tspn cumin)
1/2 teaspoon raz el hanout or garam masala,
(available at specialty stores)
Recipe
Heat olive oil in medium saucepan. Add shallots and garlic and saute for 2 to 3 minutes. Add tomatoes, harissa, raz el hanout, and season to taste with salt. Simmer for 15 minutes or until thickened. Cool for 5 minutes. Puree in a blender until smooth. This recipe yields about 4 cups.
