Tomato: Summer Formal Bowties

1 pound cherry tomatoes (mix colors)
6 ounces smoked mozzarella, cut into cubes
1/3 cup slivered fresh basil
1/2 cup vegetable broth
3 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
1/4 teaspoon dried hot red pepper flakes
1 pound bowtie pastas
Recipe
Stem the tomatoes and halve them over large mixing bowl to catch the juices. Place tomatoes in the bowl. Add the cheese, basil, broth, vinegar, oil, garlic and pepper flakes. Stir to mix and then let stand at least 15 minutes (up to 1 hour) at room temperature. Cook the pasta in a large pot of boiling salted water until al dente, about 8 minutes. Drain well and return to the cooking pot. Add the sauce and toss. Cover the pot and let stand for 2 minutes to partially melt the cheese, then toss again and serve immediately. Serves 6.
