    Homemade Pasta: The Adolphus Sweet Basil Pasta Dough

    List of Ingredients

    3 cups durum flour (extra fine)
    Large pinch salt
    3 whole eggs
    2 tablespoons egg yolks
    2 tablespoons olive oil
    1/3 cup sweet basil puree

    Recipe

    Mix together all ingredients in a food processor, until the mixture forms a ball. Remove to a floured table top and knead for 1 minute. (You will need extra flour for the kneading process.) Let rest 1 hour, wrapped in plastic wrap. Roll out to the desired thickness. Cut and fill with favorite filling. Cook in boiling salted water.

    Makes one pound of pasta dough.
