    Fennel Glazed Pork Loin

    3 pound pork loin roast
    2 cloves garlic thinly sliced
    8 whole fennel seeds
    1/4 cup honey
    1 teaspoon crushed fennel
    1/2 cup chicken broth
    1/2 cup white wine

    Recipe



    Preheat oven to 450°F.  Spray a roasting pan and rack with non-stick vegetable spray. With a sharp knife, make gashes in top of roast.  Insert garlic slices and fennel seeds into the gashes.  Place on prepared rack. Roast for 30 minutes.  Drizzle with 2 tablespoons honey.  Roast for 30 minutes.  Drizzle with remaining honey; sprinkle with crushed fennel.  Pour in chicken broth and wine. Reduce oven temperature to 325°F. Roast for 1 hour or until meat reaches 170°F.  Skim fat from pan drippings and serve separately.
