Fennel Glazed Pork Loin

3 pound pork loin roast
2 cloves garlic thinly sliced
8 whole fennel seeds
1/4 cup honey
1 teaspoon crushed fennel
1/2 cup chicken broth
1/2 cup white wine Recipe
Preheat oven to 450�F.� Spray a roasting pan and rack with non-stick vegetable spray. With a sharp knife, make gashes in top of roast.� Insert garlic slices and fennel seeds into the gashes.� Place on prepared rack. Roast for 30 minutes.� Drizzle with 2 tablespoons honey.� Roast for 30 minutes.� Drizzle with remaining honey; sprinkle with crushed fennel.� Pour in chicken broth and wine. Reduce oven temperature to 325�F. Roast for 1 hour or until meat reaches 170�F.� Skim fat from pan drippings and serve separately.
