Filet of Pork Stroganov

List of Ingredients
1 pound tenderloin pork
1 soup spoon paprika
1 soup spoon all-purpose flour
salt and pepper to taste
8 ounces regular mushrooms
3 small shallots
1 soup spoon butter
3/4 cup beef broth
1/3 cup cognac
1/4 cup heavy cream
1 tablespoon green onion, slicedRecipe
Cut the pork into 1/2 inch pieces. Mix the flour with the paprika, salt, and pepper. Coat pork pieces. Saute the filet in a pan with the butter for 3 minutes under a medium high heat. Flambe with the cognac. Remove from skillet. Keep warm. In same skillet, saute the shallots and mushrooms for 3 minutes. Add the broth and the cream. Reduce the liquid for a few minutes. Add salt and pepper to taste.
