Maple Glazed Pork with Apples

List of Ingredients
1/3 cup maple syrup
1 tablespoon spicy brown mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup dry breadcrumbs
4 pork cutlets -- (4-ounce)
2 teaspoons olive oil
1/2 cup apple cider
2 medium Golden Delicious apples -- each cored and cut into 16 wedges
2 tablespoons chopped fresh parsleyRecipe
Combine first 4 ingredients in a small bowl; stir well with a wire whisk, and set aside. Place breadcrumbs in a large zip-top plastic bag. Add pork; seal bag, and shake to coat pork with breadcrumbs. Heat oil in a large nonstick skillet over medium heat. Add pork, and cook 2 minutes on each side or until golden brown. Add cider and apple wedges; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes or until pork is done. Add maple syrup mixture, and cook 5 minutes or until thick and syrupy. Yield: 3 servings
