    Pan Roasted Pork with Milk, Sage & Potatoes

    List of Ingredients

    1/2 tablespoon butter
    1/2 tablespoon oil
    3 pounds boneless loin of pork, tied
    3 cloves garlic, peeled and chopped
    8 medium potatoes, peel and quartered
    2 tablespoons fresh sage leaves, coarse chopped or 2 tsp dried
    1 1/2 cups milk

    Recipe

    In large flameproof casserole, heat butter and oil over medium high heat. Ad d pork and brown on all sides, 3-5 minutes. Remove pork and thoroughly clean out pan. Place pork back into casserole and scatter garlic, potatoes, sage, salt and pepper around it. Pour 1 1/2 c. milk on top of meat and cover the casserole. (The dish can be prepared to this point up to 3 hrs ahead of time and refrigerated till ready to cook).

    Preheat oven to 300ºF. Place casserole over high heat and bring milk to a simmer. Cover casserole and place in oven. Roast the pork until very tender when pierced with fork, about 1 hr 45 minutes to 2 hrs. Baste pork every 20 minutes or so, adding 1/2 c. more milk or water if casserole appears to be drying out. Place pork on carving board. Discard string and cut pork into thin slices. Top with juices and pass potatoes. Makes 6 servings.
