    Pork and Rosemary Sauce

    List of Ingredients




    1 small onion finely chopped
    1 clove garlic minced
    1 tablespoon fresh rosemary chopped
    3 tablespoons olive oil
    1/2 pound italian sausage
    1 can tomatoes (1 ounce) chopped (1 to 7)
    1/2 cup dry white wine
    salt & pepper to taste
    1 pound pasta of choice

    Cook the onion and garlic in the olive oil until translucent. Remove the sausage from the casings, and add to the onions in the pan. Fry until golden brown. Add the tomatoes, wine and seasonings. Cook until thickened.

    Note: If fresh rosemary is unavailable, dried can be substitute with little change in taste. You can add 1/4 cup of heavy cream to this sauce once it is thickened for a change. Serves 4 Serve it over fusilli, or large shells, so the sauce can stick to the pasta.
